Grilled Chicken with Rice

A complete chicken-and-rice dinner full of warm spices and bright citrus.

How to Prepare

Mix the chicken with the bell pepper, onion, garlic, spices, lemon juice, orange juice and oil. Reserve part of the marinade for the rice.

Grill the marinated chicken in the air fryer (or oven) until cooked and golden.

For the rice, saute the onion in oil with the kabsa spice, turmeric, salt, tomato sauce and the reserved marinade.

Add the basmati rice and chicken broth and cook until the rice is fluffy and done.

Serve the rice topped with the grilled chicken.

Reserve some of the chicken marinade to flavour the rice for a cohesive dish.
