Beetroot Toast Sandwich
A vibrant, good-for-you sandwich: boiled beetroot sliced thin and tossed with parsley, dill, green onion and lettuce in a bright dressing of olive oil, lemon, pomegranate molasses and ginger, then layered on toast with your favourite cheese.

How to Prepare

Boil the beetroot, then slice it into thin rounds.

Add the chopped parsley, dill, green onion and lettuce.

Whisk together the olive oil, lemon juice, pomegranate molasses, grated ginger and salt to make the dressing.

Toss the beetroot and herbs with the dressing.

Spread the mix over toast bread, top with white cheese (or your favourite cheese) and serve.

Slice the beetroot as thin as possible so the flavours soak in and the sandwich stays easy to bite.
