Maqali Fried Eggplant Sandwich

How to Prepare

Fry the eggplant slices until deep golden and drain on paper.

Fry the potatoes until crisp and season with salt.

Lay the saj bread flat and arrange a line of fried eggplant.

Follow with the parsley, pickles, tomato slices and fries in neat rows.

Roll the bread tightly around the filling.

Cut in half and serve immediately — warm fillings, cold pickles, pure joy.

Salt the eggplant slices and let them sit 15 minutes before frying — they drink less oil and fry crisper.
