Mushroom Toast

A fast, comforting bite for breakfast or a light dinner: mushrooms, onion and carrot softened with garlic and warm spices, scattered with parsley and parmesan, then piled on toast under a melty mozzarella blanket and grilled until golden.

How to Prepare

Sauté the onion until soft, then add the mushrooms and grated carrot and cook until tender.

Season with salt, black pepper, mixed spices and the crushed garlic.

Stir in the parmesan (if using) and chopped parsley.

Spread the mixture over slices of toast bread and top generously with mozzarella.

Grill in the oven from the top until the cheese melts and turns golden. Serve hot.

Cook the mushrooms until their liquid evaporates so the toast stays crisp, not soggy.
