Happiness Pasta (Creamy Chicken Pasta)
They call it happiness pasta for a reason: butter-seared spiced chicken, a sauce of tomato paste and two cups of cooking cream, shells that catch every drop, and mozzarella melted over the top until it pulls in ribbons.

How to Prepare
Season the chicken cubes with black pepper, mixed spice, garlic powder, onion powder, paprika and salt.
Heat the oil with the butter and sear the chicken until golden; set aside.
In the same pan, soften the chopped onion with a pinch of spice and chicken stock powder.
Stir in the tomato paste, then pour in the cooking cream and water and let the sauce bubble gently.
Return the chicken, add the boiled pasta and toss until everything is coated.
Scatter the mozzarella on top, cover until melted and stretchy, and serve hot.
Boil the pasta a minute short of done — it finishes in the cream sauce and drinks up the flavour instead of just wearing it.
