The secret is not the cream — it is the order of the steps: the shrimp is seared first and lifted out before it toughens, and the sauce is then built on the drippings it left behind. This version marries tomato paste with cooking cream and mozzarella, so the sauce comes out warm orange and silky without a spoon of flour or cornstarch. The one step never to skip: the half cup of pasta water at the end.

Take the shrimp out before you start the sauce and return it only for the last 30 seconds. Left to simmer in the sauce it will turn rubbery no matter how good the sauce is. And always scoop out half a cup of pasta water before draining — that starch is what makes the sauce cling.

Ingredient Swaps

No fresh shrimp? Use frozen, fully thawed and patted very dry — extra water stops it from searing.

Swap the cooking cream for heavy cream, or a cup of whole milk with a teaspoon of cornstarch dissolved in it.

Not a tomato fan? Leave out the paste and double the mozzarella for a white alfredo-style sauce.

Mozzarella can be replaced with shredded cheddar, or a quarter cup of parmesan for a sharper, saltier finish.

Any pasta shape works — shells, penne or farfalle — as long as it is boiled al dente, since it finishes cooking in the sauce.

Add a pinch of crushed red pepper or a teaspoon of cajun seasoning if you want it spicy.

For a lighter plate, replace half the cream with pasta water and bump up the seasoning a little.

How do I know the shrimp is done?

It turns from translucent grey to opaque pink and curls into a C shape. If it curls into a closed ring, it is overcooked.

Why did my sauce split or go grainy?

The heat was too high when the cream or cheese went in. Add both over low heat while stirring, and if it splits, rescue it with two spoons of hot pasta water and vigorous stirring.

Can I make it ahead?

The sauce, yes — it keeps two days in the fridge. Add the shrimp and pasta only when reheating, so the shrimp stays tender and the pasta does not drink up all the sauce.

Add pasta water two spoons at a time while stirring until it loosens. Do not use plain water: it dilutes the flavour without the starch that binds.

Can I cook the pasta in the sauce?
