Ginger-Lemon Refresher
Chef Noor simmers fresh ginger with sugar into a golden syrup that keeps in the fridge, then shakes it up with fresh lemon juice, mint and plenty of ice — a Ramadan-table favourite you will want all summer.

How to Prepare
Simmer the ginger pieces with the sugar and water for about 15 minutes until you have a fragrant golden syrup; strain and cool.
Keep any leftover ginger syrup in a jar in the fridge for later.
Fill a jug or glasses with ice cubes, pieces of ginger and lemon, and mint leaves.
Pour in the fresh lemon juice, a cup of the ginger syrup and a cup of water.
Stir well, taste and adjust — more syrup for sweetness, more lemon for sharpness — and serve ice cold.
The ginger syrup keeps for weeks in the fridge — make a double batch and you are one squeeze of lemon away from this drink any day.
