Layali Lubnan (Lebanese Nights Semolina Pudding)
Layali Lubnan, "Lebanese Nights," is a simple make-ahead pudding: a vanilla-scented semolina-and-milk base that sets in the fridge and is crowned with cream and pistachios.

How to Prepare
In a pot, combine the milk, semolina, vanilla, and mastic (if using). Cook over medium heat, stirring constantly, until the mixture thickens.
Stir in the orange blossom water and one can of clotted cream, then pour into a serving dish and smooth the top.
Spread the second can of clotted cream over the surface and sprinkle generously with crushed pistachios.
Refrigerate until fully chilled and set.
Serve cold with a drizzle of honey or sugar syrup.
Keep stirring while the semolina cooks so no lumps form, and let it chill for at least a few hours (or overnight) before serving for the cleanest slices.
