Chef Noor recreates that pricey café dessert at home: qishta whipped with cream and a sachet of cream caramel into a quick custard, spread over brioche with a layer of fruit jam, and finished with red and blue berries.

How to Prepare

Whisk the qishta with the whipping cream, the cream caramel sachet and vanilla until smooth and thick.

Slice or lay out the brioche and spread a layer of fruit jam over each piece.

Spoon or pipe the cream-caramel custard generously over the jam.

Use slightly stale brioche — it holds the cream and jam without turning to mush, just like the cafés do it.
