How to Prepare

Cook the meat with your usual spices until tender, reserving some broth.

Prepare the rice and toast or fry the bread until crisp.

Whisk the yogurt, tahini, crushed garlic and salt into a smooth sauce.

In the serving dish, layer the toasted bread, then the rice.

Pour the yogurt-tahini sauce over the layers.

Arrange the cooked meat on top.

Garnish with toasted nuts, a drizzle of hot ghee and chopped parsley. Serve immediately.

Assemble the fatteh just before serving so the bread stays crunchy.
