Spinach & Mushroom Eggs

An easy one-pan breakfast that turns eggs, mushrooms and spinach into something special.

How to Prepare

Heat a little olive oil in a pan and sauté the onion until soft.

Add the mushrooms and cook until golden, then stir in the garlic and black pepper.

Add the spinach and cook until just wilted.

Lay over the cheese slices, if using.

Make wells and crack in the eggs; season with salt and pepper.

Cover and cook until the eggs are set to your liking, then serve.

Cook the mushrooms until all their liquid evaporates so the eggs stay rich, not watery.
